Doug's research interests include the role of essential fatty acids in human and animal nutrition, the role of polyunsaturated fatty acids in the down regulation of the inflammatory response and the application of PUFA in the treatment of disease. Current projects are directed at investigating the effects of highly unsaturated fatty acids on eicosanoid and cytokine production in Kupffer cells. Other ongoing research is examining the essential fatty acid status and its implications in cystic fibrosis, Crohn's disease, critically injured and adult respiratory distress patients and in patients with autoimmune disorders.

The research interests and contributions of Ralph T. Holman began in
1943 with the oxidative deterioration of fat, and have included,
lipoxidase, essential fatty acid metabolism, polyunsaturated fatty acids
(PUFA), methods of lipid analysis, mass spectrometry of lipids, in-vitro
metabolism of fatty acids, quantified and structural requirements for PUFA,
interactions between dietary fatty acids and PUFA, interactions between
dietary PUFA and other nutrients, nutritional and functional properties of
hydrogenated fats, PUFA abnormalities in diseases, and quantitative chemical
taxonomy of orchid and magnolia fragrances. Recent
research has focused on the essential nature of the omega-3 fatty acids and
their role in human health and disease.

"Research interests in omega 3 PUFA particularly related to the role of DHA in the visual process in collaboration with Dr A.J.Vingrys, the comparative effects of alpha-linolenic acid versus EPA and DHA in prevention of colon cancer in collaboration with Prof G. Young and Dr F. Macrae, the anti-inflammatory effects of omega 3 PUFA in collaboration with Dr T Macrides, and the antithrombotic properties of high DHA oils in collaboration with Mr A Turner. Additional research interests include the comparative effects of meat eating versus vegetarianism on lipid metabolism and cardiovascular health in collaboration with Dr N Mann, Mr A Turner and Mr D Li, and the effect of stearic acid on thrombosis tendency in collaboration with Ms F Kelly, Dr N Mann, Mr A Turner and Mr D Li."
